This is my brunch staple, nothing says I love you more, than a big plate of berry pancakes, drizzled in delicious maple syrup! Pop open the prosecco and kick off the weekend in style.
Ingredients (Serves 4)
- 170g of Plain Flour
- 170g of Wholemeal Flour
- 2 Teaspoons of Baking Powder
- 2 Teaspoons of Vanilla Sugar
- 2 Eggs
- 230ml of Buttermilk
- 250ml of Semi-Skimmed Milk
- A drizzle of rapeseed oil for frying the pancakes
- Mix all the dry ingredients in a large mixing bowl until combined
- In a separate bowl whisk the eggs and buttermilk until combined and fluffy
- Combine the dry ingredients with the whipped eggs and buttermilk
- Add the milk in slowly to great a batter as thick or thin as you like
- Meanwhile heat up a pancake pan on the hob on medium to low heat
- Add oil to the pan making sure it’s covered the whole pan
- Using a ladle spoon the batter into small round pancakes on the pan
- Leave to fry for 3 minutes each side
- Serve with lots of berries and some sizzling bacon!
