V’s Beautiful Buttermilk Berry Pancakes

This is my brunch staple, nothing says I love you more, than a big plate of berry pancakes, drizzled in delicious maple syrup! Pop open the prosecco and kick off the weekend in style.

Ingredients (Serves 4)

  • 170g of Plain Flour
  • 170g of Wholemeal Flour
  • 2 Teaspoons of Baking Powder
  • 2 Teaspoons of Vanilla Sugar
  • 2 Eggs
  • 230ml of Buttermilk
  • 250ml of Semi-Skimmed Milk
  • A drizzle of rapeseed oil for frying the pancakes

  1. Mix all the dry ingredients in a large mixing bowl until combined
  2. In a separate bowl whisk the eggs and buttermilk until combined and fluffy
  3. Combine the dry ingredients with the whipped eggs and buttermilk
  4. Add the milk in slowly to great a batter as thick or thin as you like
  5. Meanwhile heat up a pancake pan on the hob on medium to low heat
  6. Add oil to the pan making sure it’s covered the whole pan
  7. Using a ladle spoon the batter into small round pancakes on the pan
  8. Leave to fry for 3 minutes each side
  9. Serve with lots of berries and some sizzling bacon!
