These make a beautiful big batch! Tasty, super soft and full of banana, nutty, chocolatey goodness. My favourite kinda cookie! Useful tip: Cookie dough can be frozen to use again another time.
Ingredients
- 330g of Plain flour
- 160g of Wholemeal flour
- 1 Teaspoon of salt
- 1/2 a Teaspoon of Bicarbonate of Soda
- 240g of Butter (softened)
- 3/4 of a Cup of golden caster sugar
- 1 Large egg
- 1 Large ripe banana (mashed)
- 330g of Oats
- 140g of Dark chocolate Chips
- 160g of Chopped pecans
- Pre-heat the oven to 190 degrees Celsius
- Mix together both the flours, salt and bicarbonate of soda
- In another bowl beat together the sugar and butter with an electric whisk until pale and fluffy
- Add the egg, vanilla and banana (don’t worry if it looks sloppy it’s suppose to!)
- Mix in the flour mixture with a wooden spoon until it has all just combined
- Then add the nuts and chocolate
- Use an ice cream scoop or big heaped teaspoons to create those giant delicious cookies, making sure to leave enough space between each of them. I tend to make 2 trays of 6 so the cookies are bigger! I only use half the batch and freeze the other half for another time.
- Bake for 14-15 minutes until golden and crispy on the outside and soft in the middle
- Then transfer to a cooling rack
- Enjoy!
