Chunky Monkey Cookies

These make a beautiful big batch! Tasty, super soft and full of banana, nutty, chocolatey goodness. My favourite kinda cookie! Useful tip: Cookie dough can be frozen to use again another time.

  1. Pre-heat the oven to 190 degrees Celsius
  2. Mix together both the flours, salt and bicarbonate of soda
  3. In another bowl beat together the sugar and butter with an electric whisk until pale and fluffy
  4. Add the egg, vanilla and banana (don’t worry if it looks sloppy it’s suppose to!)
  5. Mix in the flour mixture with a wooden spoon until it has all just combined
  6. Then add the nuts and chocolate
  7. Use an ice cream scoop or big heaped teaspoons to create those giant delicious cookies, making sure to leave enough space between each of them. I tend to make 2 trays of 6 so the cookies are bigger! I only use half the batch and freeze the other half for another time.
  8. Bake for 14-15 minutes until golden and crispy on the outside and soft in the middle
  9. Then transfer to a cooling rack
  10. Enjoy!
